at the risk of starting an all out word battle :)

you're at the butcher;  what cut of steak do you ask for?

me?  i just like the NY-strip.  it is more challenging to cook than the Ribeye, but i feel it has more of a beefy flavor..and less fat.

but the fat of a ribeye isnt a bad thing. 

what is your choice. ?

me in summary:
NY strip.
salt/pepper only.
Med rare..closer to rare.
i actually love it pan seared.  i use the bbq grill, so i dont smoke out my home.
 
T-Bone first and Bone-in Ribeye a very, very close second.  Love the flavor the bone imparts on the steak.  Love the fattiness of the ribeye.


Salt, fresh ground black pepper (occasionally add garlic powder)
Medium rare
Sear on high 1-2 mins, turn and reduce grill to low for remaining few minutes.
Alexander Valley Cabernet Sauvignon
 
Porterhouse flame grilled medium rare with salt, pepper, and finished with a pat of garlic butter..............
 
Bone in ribeye, salt, peppered and sprinkled with finely chopped dehydrated wild mushrooms. Let that bad boy sit in the fridge, uncovered for three days, bring it up to room temperature and introduce it to the grill. Medium rare, sweet potato on the side.
