Canning elk or venison?

Has anyone ever canned elk or venison?
Its something I\'ve been thinking about getting into and I was just wondering if anyone does it?

I grew up on canned venison. Its some good stuff!
Pour it over some mashed potatoes.... yummy

I dont do any canning of meat tho, I do know you gotta watch out for botulism

Haven\'t tried it Dan but believe you need a pressure cooker. Done a lot of canning but never meat.

Good stuff. My mother inlaw has done venison for me and it is very good. Does not look that good in the jar but looks are definitely deceiving.

I have canned a lot of deer. Cut into cubes, place in jar, add salt, install lid, and pressure cook. It is that simple. Just open a jar and eat on crackers or add to any meal.

Is canning a better way to keep meat opposed to freezing?

Im not sure about that, Brad.
I just like the idea of clearing up my freezer if I need to make space.

I give tons away, but lets say I want to keep some. I could can some of my older stuff and free up space. :upthumb:
