Elk Heart-Gutless

I've seen a few recipes for elk heart I'd like to try. I'm wondering if there are any videos or tips out there for getting the heart out using a gutless method. I use the gutless method all the time but would like to grab the heart if there is a good tip on how to!
 
Can't be too hard, by the time you get the everything peeled off the heart should be very easy to get at.  You might have to detach some of the gut sack, but just to get at the heart won't take much.  Now if you want to eat the top of the esophagus I hope you have those shoulder length gloves in your pack.
 
You can get at it from the top of the diaphragm and reach up in I normally crack a rib open and go in from side to detach.  Typically I go at it last after moving guts around anyway to get at tenderloins easier.  Try Hank shows recipe for marinating the heart.  Salivating thinking about it.

Just finish up your gutless method, then open them up from the sternum down far enough to get in there and cut the heart out.
