elk meat

I was wondering what everyone might do with there first bit of harvested elk meat.

I picked mine up from the butcher this week & flopped a lip over some burgers tonight. Sure is good stuff. I have had a couple year dry spell..



I know these backcountry hunts probably involve some backstrap or tenderloin over the fire.

I don't eat any fresh in camp, I like it to age, I haul it back to Michigan, and I usually let it age for 7 to 10 days from when I shot it, Then I process it myself, grind my own burger I add 10% beef suit too that.
some back straps are usually the first thing we eat.
It is almost time to head to MT for a couple of weeks.

Nothing like fresh tenderloin in camp or the mt. I once shot a bull in front of an outfitter riding in. He said if our mules are empty on the way out that he would pack him out. I got him hung made a fire ate mucho tenderloins took a nap and watched him load the bull at the end of the day.....it was a great day!
 
I made Italian Roast Elk, slow cooked a roast for 8 hours and then sliced it thin.  Some fresh hoggie rolls, cheese, red onions and horse radish; the guys at work didn't know what to do with themselves.  This was something different, I had just been making steaks and black/blue burgers.
