i skin my birds. i then breast out the meat.

the carcass, i bag up separately. i grill it over high heat coals, and then put the entire thing into this gigantic stock pot. simmer it into turkey stock! cool, portion, and freeze into quart baggies..and use them throughout the months making soups.

the breast? sky\'s the limit. i love the breast meat.

I started taking the thighs and breasts last year. way easier to store in the freezer. my turkey recipes are like the guys in the forest gump movie. I smoke them, fry them, shishkabob them...... :lol:

My favorite way is to cut the breast in strips, wrap the strip around a jalapeno pepper, wrap a piece of bacon around that and grill it. Of course, possum would probably good like that!
 
I take half a breast and smother it in BBQ sauce and wrap it in thick cut bacon. Cook it right next to the hottest part of the grill. I cook it till the bacon is about burnt. The breast stays nice and moist.
 
I like to let the breast marinade in Italian dressing for about 24hrs. Then I put it on the grill. Going to try and smoke one this year on my pellet smoker.

Haha. Not by me! The carcass is inedible. IMHO. If I didn\'t make stock..,,

It makes a great stock. This year I want to use it to make chicken pot pie.
But making stock is a true PIA.
