Getting ready for our annual Sausage Day tomorrow.
We\'ll be converting about 200 lbs of elk, deer, goose & a little pork fat into some summer sausage, jerky, brats, snack sticks and breakfast sausage. I\'ve got 25lbs of jerky mix (elk) pre-soaking overnight so we can fire up dehydrators bright and early while we mix and stuff everything else during the day.
Got the garage cleaned up, equipment wiped down and the beers are cooling! Should be a good day!
