Sausage Day

Getting ready for our annual Sausage Day tomorrow.

We\'ll be converting about 200 lbs of elk, deer, goose & a little pork fat into some summer sausage, jerky, brats, snack sticks and breakfast sausage. I\'ve got 25lbs of jerky mix (elk) pre-soaking overnight so we can fire up dehydrators bright and early while we mix and stuff everything else during the day.

Got the garage cleaned up, equipment wiped down and the beers are cooling! Should be a good day!

Sounds like a great time - how\'d it turn out? I enjoy making summer sausage and snack sticks. Haven\'t found a good brat recipe yet and would kill for a good hot link recipe! Can\'t wait for warmer weather to get smoker going. It was a great day Russ! I\'m always in the market for \"scratch\" recipes as well. We do have a decent breakfast and Italian sausage recipes, but yesterday was dedicated to all store bought seasonings.

Looks like a blast Matt! Nice smoke box you got there as well. Did you build that on your own?

I got a good scratch recipe for brats.
I just may have to do up 10lbs or so
