Smoked Whitetail Ribs

Put a batch of Nebraska WT ribs in the smoker today
I?m Using the 3-2-1 Method

After 3 hrs of smoke I put them in a pan and smothered them with bbq sauce and added a little 7up for some sugary moisture

Covered with foil and cooked for 2 more hrs
 
After those 2 hrs I took them out of the pans and finished them on the grates for about 45min to let the sauce tack up

Almost time to eat

 
Wow. Some good stuff.
Won?t be leaving any more rib cages in the woods if I can help it
 
This is great!!!  I have never tried this, nor have ever thought about it. Here we usually just toss the ribs so this is something I will be checking out for sure.
 
were tehy greasy? 


every time I've cooked whitetail ribs, they taste greasy. 


Makes me think I'm gonna  have a heart attack in about 45 minutes  :-[
 
They werent greasy at all.


I did place them with the bones up and I believe that helped drain the fat away during the smoking process
 
I've got a friend at deer camp that fries deer ribs similar to how he fries deer steaks...

Never tried them but he says that if I do I'll never discard the rib cage again...

Those are strong words, Ol Arky. Can you get the recipe from him by any chance?

I'll try to get in touch with him but duck seasons still going on and he may be hard to find... I'm pretty sure he'll give me the recipe since he give folks all the recipe for what he cooks...
