So, I had some excellent smoked salmon the other night and was wondering how you guys go about smoking fish?

I had some of that same fish. I thought it was a tad salty ;)

I make my own marinade. I use some salt, some soy sauce, BBQ sauce, brown sugar , black pepper.
I let the fish soak for about a day with mixing it occasionally.

Then I use charcoal in my smoker with apple wood.
The temp needs to stay about 160-180 for about 4 hours

Then air cool the meat

The fillets on the left is what you had.

It may have been just a tad salty but dang it was good! Is there any magic to the quantities you\'ve listed?
 
So it\'s time to smoke some more Alaska salmon.
I decided to put together a \'show & tell\' on how I do it

This recipe will be for 2 salmon fillets - or 4 pieces

I use
Soy sauce
Brown sugar
Salt
Ground black pepper
BBQ sauce

I a plastic sealable container, combine the following:

1 cup soy sauce
1/4 cup brown sugar
3 TBSP salt
2 TBSP ground black pepper
2 TBSP BBQ sauce

Mix well with a fork to dissolve salt and sugar

Place one fillet - 2 pieces - into container
Be sure cover is on tight ;)

Shake container to mix ingredients to coat fish evenly.
Place in frig for 24 hours, shake container every few hours to mix fish and marinade.

Looks tasty Brad. I have not smoked anything for years. I might have to do something this spring.
 
After work I fired up the charcoal in the smoker and got the fish on

I got the temp to 180 and we are smokin\'!!!

At 2 hours I turned the fillets over and after 3.5 hours they are done

Dang that looks good Brad.I think I need to go and catch some Tulipies this weekend and smoke them up.
 
Brad, you\'re all right! Thanks for the step by step, now I just gotta catch me some fish!

I still think my smoker is cooler :angle: , but you got me beat by a long shot in the fish category.
