What do you do with your elk?

Are you a steaks and ground elk person?
Do you make jerky or summer sausage?

What is the percent break down that you do?



For me I am a steak and ground person myself.
I generally do 75% of it into ground and then 25% steaks!
 
Deer and elk both, majority ground the rest steaks and a little stew meat for Maw.... :mrgreen: :mrgreen:

This year we saved some to use to make jerky since the boys and grand boys like it so much but haven\'t been able to do anything with it yet...
 
I cut every steak I can and a few roasts. I save some jerky.
Everything that is left gets ground up for burger.
 
Steaks and ground for us. The ground can then be used for jerky, sausage, brats, etc or just as ground burger.
 
I had my half all made into fine ground ring bologna and my hunting partner(my son) likes the steaks and roasts, so he took those.

Elk ring bologna? I\'d sure like to give that a try!

Prime steaks only(loin, tenderloin, sirloin, top rounds), stew meat and rest burger. Like to make my own summer sausage and snack sticks so use more burger than anything else. Granted, I can always cut up steaks for stew or grind for burger if I just did steaks and burger. I also prefer to have about 10-15% fat/suet added to the burger so it\'ll stick together better.
