Maybe the sauce from the peppers made the mixture have too much moisture?

The only other thing I've heard of is to add powdered milk to make it so it's not as juicy. Somehow it sounds like there's just too much moisture in it, so when you cook it the moisture evaporates and shrinks the sausage.

 
Hadn't thought of that Derek.  Prior times I have taken a few chipotles out of the can and removed the seeds then pureed, this time I just dumped in both cans.


I use the same recipe for jalapeno so may make a couple of pounds with the same recipe but use jalapenos instead of chipotles and that will easily tell if the culprit.


Appreciate the brainstorming...now guess better get back to work....or go thaw a pound of summer sausage for lunch!

Try hosing the sausages down with a water hose/sprayer. Dont completely soak
All you're trying to do is stop the cooking process
