hanger steak?

i had a hanger steak off of a cow last night..it was great.

got me thinking..i am gonna look for it in an elk. anyone find one? i am not a butcher and i am gonna visit one today for some pointers..

anyone?
 
Hanger steak??? I assume that is a steak off of a fresh butchered cow that has been hanging in a cooler to age the meat.

Just go shoot an elk Cliff and have the butcher hang the quarters in a cooler for a week or two before he cuts it up for ya. :upthumb:

I guess from reading that all have a hanger steak - just need an experienced person cutting it up(not me). For flank, I believe it\'s best to cut against the grain of the meat - not sure about hanger.

The flanks of a moose or elk will give you several good-sized flank steaks. That long, triangular flap of pure muscle just inside the ribs? That?s the skirt steak and, in my opinion, the best cut of beef on the animal. Both are great for grilling or for tacos. And if you are careful when you gut your moose or elk, you can save the hanger steak that separates the gut cavity from the lungs and heart. Beef hangar steak is one of the trendiest cuts of beef right now, as it offers skirt steak richness with the tenderness of ribeye.

I guess I was way off. Should have asked Mr Google what a hanger steak was. :lol: :oops:

I usually leave those steaks with the other organs for the critters to eat.
 
Terry, guess my source was pretty obvious although not as funny! Had heard about hanger steak but obviously had no clue where they were on an animal. Familiar with flank and skirt steaks but not hanger so just had to query and find out.

Like you though, I don\'t think I\'ll be sorting through the \'pile\' looking for the hanger steak this fall!
