After being spoiled with eating elk at least once a week over the last year, I\'m really going to miss it :(

Rudy, I feel your pain. Chicken jalapeno cheese summer sausage just isn\'t a suitable substitute.
 
That is definitely going to be a setback on your tastebuds Rudy.
But just think how savory it will be when you get some more!
 
Anyone know of a good place to get that made? I\'ve tried doing it at home, and it turned out \"ok\", but ... it was a pain in the rear.

Good summer sausage is worth it. Great for snacks while cc-skiing, snowshoeing, hiking, riding, camping, having guests over for cocktails, and ... hunting, of course.

And I think the jalapeno scent is an attractant for elk.
 
Don\'t know if it\'s worth traveling that far for you, but Steve\'s Meat Market in Arvada does an awesome job with sausage, jerkey, sticks, etc.
 
A place called Stans Meat near Timnath does this type sausage with good flavor
 
Thanks, guys. I still have a cow to shoot, and may get this one processed -- I\'m tired of processing meat. And now it\'s time for specialty stuff, anyway.
