Weekend cookout

Happy belated Father\'s Day to those Dad\'s here! Curious if anyone else got outside for a cookout. Not being a Dad, I fired up the smoker on Saturday.

Menu:
Smoked sockeye salmon - rubbed with olive oil and lemon juice with some dill weed. Used Alder wood for 1 hour at 225 degrees. Served on crackers with sour cream and capers.

Baby back ribs - used favorite rub just withheld the cayenne pepper as my wife doesn\'t like the dry rub as spicy as I do. Used Hickory wood for 3 hours smoke plus another hour so total 4 hours at 225 degrees.

Baked beans - canneloni and light red kidney beans, roasted tomatoes, BBQ sauce without High Fructose Corn Syrup, spices. Put in with ribs for an hour at 225 degrees.

New potatoes - diced and tossed in olive oil then roasted in oven at 350 for 40-45 mins.

Hey Dan! Was just thinking this weekend that I can bring my small smoker with me to OK and we can run your generator during the day while we\'re hunting then have a smoked FEAST!! Of course, gotta leave room for biscuits and sausage gravy plus grilled elk/antelope steaks!
 
WHAT! NO CHILLI !!! Terry, I can vouch for Russ. He is a great camp cook.

I have a nice sized smoker that I can bring out.
I can also bring some sort of surge protector and we can run it from the generator to the smoker. That way it\'s getting clean \"juice\"

Like I told Dan via text - I\'d be a much more successful hunter if I focused as much on hunting as I do on cooking!! I forgot you bought that Masterbuilt smoker so we can definitely add a little cure to it over a hunt.

WW - I still chuckle at the Russ Boyarde you bestowed upon me way back when! Need to do another piggie hunt soon.

Terry - this hunt in OK isn\'t like our CO backpacking kinda hunts so do have a few more \"luxuries\" at camp. Most notably - Dan\'s camper!! I do like a good midday meal if I go back to camp during the day. My CO elk hunt this year will likely be similar since we\'re on private land and only hunting early morning and late evening so as to not push off the property. I actually don\'t like some of these hunts because of the amount of \'down time\' between sits.
 
That looks damn good Russ! Biscuts and gravy is my downfall, good thing I\'m not hunting with you guys - I\'d probably be in camp \'till lunch when I came out of my food coma!

I didn\'t grill anything - my boys wanted to have some Pho and then take me to see Jurasic World.
 
Baby Huey - cool spending time with the boys! Don\'t take this wrong and it\'s probably because of being raised in Oklahoma when \'Pho\' more likely meant it was a long ways - \"How Pho is it to Tulsa from bouts here?\" \"Dang near a 12 pack drive if\'n you don\'t have to stop\".

Our company preaches Diversity and this just goes to show how times they are a changin\' with our youth. As a kid, we\'d have gone to Braum\'s for a burger then the $1 matinee!! Don\'t figure there were many Vietnamese places in the area I grew up anyways.
