I marinated some small chunks of elk in Italian Dressing. Probably a couple hours is good.
Get some rice noodles, bring some water to a boil, turn the heat off and throw the noodles in. Let them soak for about 10 minutes,then drain. Set them aside.
Recipe usually calls for bean sprouts, but they are so volatile, I just slice down a large onion so it looks like \"noodles\". Stir fry them in a little coconut oil until limp, then throw the drained noodles in and stir them around for about a minute. I shove all that junk to one edge of the skillet, then throw the meat in. With the small chunks, I just stir them around for no more than a couple minutes...then stir them together with the other stuff. Then I add Pad Thai Sauce and my \"special ingredient\"...Szechuan Spicy Stir Fry Sauce. The more you use, the hotter (spicier) it gets. I stir all the junk and sauce around until it sort of thickens up, then shove it all to the edge, and throw 2 eggs in the open part of the skillet and scramble them up. Then stir everything together and serve (top with crumbled cashews and green onions if you like)![]()

Weight loss is going ok ... in two weeks, I\'ve gained 3 pounds, but then lost 5, so I\'m right at where I wanted to be: 1 pound per week. Another 8-12 weeks and I\'ll be ready to relax a little on the eating.
